It is a place where scale is combined with depth of taste, and hospitality is combined with a cultural tradition passed down from generation to generation.
The central figure of the menu is definitely pilaf, cooked in huge cauldrons standing right in the middle of the hall. Each pot is the result of many hours of work by master cooks who add mutton, cumin, onion, carrot and noble bulgur with a sense of proportion and without a single chisel to achieve the perfect balance between fat content, sweetness and spice. The rice will crumble like desert sand, but inside each grain there is juiciness and warmth of fire. The fat that remains on the fingers after eating is not discarded, but becomes part of the ritual — a sign of true pilaf.

Both Bukhara Osh Sofi and Samarkand Osh Zigir. I liked Bukharsky better. It is more tender, with more different flavors, because it is brewed with two types of carrots, raisins and chickpeas. But Samarkand is also good. It's just that our favorite stayed at the Samarkand pilaf center number 1. It tastes even better there. We were here after 18:40 today. We ordered Bukhara pilaf. The cooled Samarkand pilaf was brought to us, slightly warm.
