I really liked the place, but there is a PROBLEM.
We came without reservation, they told us there were no seats, so we asked ourselves to sit at the bar, wait for a table (for some reason the waiters did not offer it to us). In fact, the hall was half empty and it confused us.
When we went to the toilet / smoke, we saw exactly the same picture — there is no full landing and why we were not put at the table was unclear to us.
Now to the pros:
The kitchen is amazing, everything was very tasty. Great beer for adequate money and unrealistic tinctures of our own production, one tastier than the other!
I also really liked the bartender Egor, who brightened up our evening (helped with the selection of dishes and alcohol, joked and was very nice).
I definitely recommend this place, I will come back here 100% for pancakes and tinctures, but the waiters would like to learn how to communicate with guests a little more loyally.

The ear is just gorgeous!

Duck leg is delicious, but a little dry.
Of the cons: if you are positioned as a restaurant (as stated in the prices), then you need to work long and hard with the staff, namely with the waiters.
The waiter is not interested in accommodating guests at the meeting (but thank you for offering a more comfortable table, and not on bar stools)
Salad with eggplant and grilled vegetables did not meet expectations at all, 5 thin slices of eggplant (I would like to see more) grated cheese 3 gr. If eggplant and cheese appear in the name, then they should be at an advantage in quantity. Zucchini and broccoli are just raw, hard, and bitter. When ordering this salad, you get "crunch an iceberg for 800 rubles".

We recently celebrated a birthday here, we were there for the first time, we really liked some of the dishes, and some were completely disappointed, the borscht with a rubber piece of meat was very sad and the ear was completely upset (( the broth is some kind of water without salt, we expected rich fishy, the potatoes in the ear taste like yesterday's boiled with this very taste of yesterday, a small piece of river fish had the aroma of mud, and tiny pieces of red fish were greasy, it tasted unpleasant, the portion of fish soup itself was scanty, in general, I will definitely never order borscht and fish soup in Bulbash again. I was pleased with the pancakes with mushrooms, they turned out to be tastier than with meat.
The fish cutlets with corn puree are good, but the portion is tiny.
The drinks include delicious tomato tincture and wheat beer. Special thanks to the girl for her sincere service and congratulations to the birthday boy on December 30, 2024 at 21 o'clock, you don't often see this lately. The atmosphere of this institution is pleasant, the music sounds unobtrusive, does not interfere with the conversation. Another disadvantage is that the portions are too small and the cost of the dishes is high, as there were slightly different expectations from the beer restaurant in terms of grams)) well, and the quality of some of the described dishes.

Due to the circumstances, we ended up in this restaurant... The expectation and reality turned out to be twofold. We have heard and read so many recommendations, and we will describe all the pros and cons below.
1. You can only get into the restaurant by pre-booking, being in the restaurant for about three hours, I had to observe this picture, there are empty tables for two hours, and people coming in from the street are not allowed ...
2. Not very friendly staff who make comments to visitors... For a moment, we didn't come to the restaurant to be silent, but to chat with friends.
3. The food is delicious, with traditional Belarusian cuisine, the serving is beautiful.
4. Delicious beer, this is the biggest plus of this institution.
5. The atmosphere is tense, not at all about the hospitality of Belarus.

We came in with a friend completely by accident. We took Fireman 's cutlets and desserts . I liked everything very much. Delicious is extraordinary!!! The service is excellent. It's some kind of gustatory orgasm. So delicious and proper Pancakes, cutlet, onion, everything is easy to lick your fingers. Dumplings, sauce, serving, tongue. The only thing that happened when trying to book was a strange situation - a young man on the phone said that there were no places for the near future, but we were walking by anyway - we decided to look in, and they gave us a table without any problems. And there were a lot of free tables. Why he said that is not clear.

Overall impression:
The Bulbashi restaurant attracted us with a lot of positive reviews and recommendations. We expected to enjoy traditional Belarusian cuisine in a pleasant atmosphere, but the impressions remained mixed.
Advantages:
Location: In the city center, convenient to get to, beautiful view of the historical part of Minsk.
Local cuisine: The menu includes many traditional dishes made from local products, which is important to support local producers.
🏛️ Atmosphere: A veranda with a pleasant view, an atmospheric place.
Minuses:
Inaccessibility: The place is not very convenient for passengers with limited mobility, as the hall itself and the veranda have steps.
🕰️ Slow service: The dishes had to wait about 30-40 minutes.
The obsession of the staff: The waiter often came up and hurried us with the order, even when we made it clear that we would call him ourselves.
Forgetfulness: Requests for ice-free lemonade were ignored twice.
🔥 The quality of the dishes: The dessert turned out to be burnt, which significantly spoiled the taste.
Interior: The design was more like a kebab shop, which did not meet our expectations.
Conclusion:
The Bulbashi restaurant was not as impressive as we expected. Despite the good selection of local products and convenient location, the service leaves much to be desired. The service was slow, the staff was intrusive, and the quality of some dishes did not meet the standards.
We give 3 out of 5 stars for the delicious food, but next time we will choose another place for dinner.

I give 2 stars to this restaurant, just because of the delicious food, I visited the institution twice, which I want to say - You URGENTLY need to change the ADMINISTRATOR (a dark girl)!!! I have not seen this in any restaurant in Minsk, rude, not friendly. Instead of solving the problems of the guests by seating, she clucked, snorted and said "Whatever you want." The waiters are all scared, they don't smile, as if they are working with a supervisor.

She refused to visit, did not give full information about what time it was possible to book, after that she stopped answering questions, pointedly turned away and began to press buttons on the computer. We stood for three minutes, waiting for the girl to pay attention to us, but she continued to stand with her back turned, expressing complete disrespect. We left the restaurant in disbelief, not understanding what caused such contempt for us.
We read wonderful reviews, we really wanted to visit this place, but it's a pity that one particular waiter/receptionist was able to spoil the impression of the restaurant so much.

The boorish waitress refused to put our company at a large table, referring to: "We already had a large company, they left a bad review." The request to put everyone separately was also refused. I think there's no need to explain further – we're gone. For the sake of interest, we reached the nearest restaurant of the chain on Freedom Square. Surprisingly, we were immediately offered accommodation.
Dear management, have a conversation with your staff. This attitude towards the guests is simply inadequate. I didn't manage to eat the national cuisine, it's a pity. Of course, we will not return anymore.

I didn't like it categorically. Let me explain. I was puzzled by the question of where to bring the guests of the capital, so as not to lose face. I read a lot of praise, booked a table. Our table turned out to be right at the entrance, exactly where visitors are greeted, where waiters fix orders before reaching the brewery apparatus, there is a table in the nook. An extremely inconvenient place, gentlemen restaurateurs! They could not appreciate the hall and all the beauty of the interior. At the same time, for five ordered guests, the table is set for four. Were you sure you were expecting us? They asked for the opportunity to stay on the terrace, it turned out to be difficult for 5 people. Probably it is extremely difficult to move several tables on the terrace for such a respectable establishment?! The result is that we sit in the middle of the road, where visitors, staff, etc. constantly walk near you. What a pleasure it is to eat and socialize. And there's a music column on top, right above us. It is not Belarusian melodies that are being hammered. Next, the staff. The waiter girl knows everything about the menu very clearly, flies off her teeth, but we did not see a smile either immediately at the meeting or during the service. A kind of soldier in national clothes. Food. We took different options, snacks, hot dishes. Perhaps the expectations were overstated, but in the end nothing special: a cheese plate is some kind of minimalism, some types of cheese are cut so that it is extremely difficult to prick it on a fork and even more so to dip it into the offered sweet. Draniki are like draniki. Tar tar, beef brisket, pate, game (lamb) all good, but nothing outstanding. Beer of our own production was also disappointing, we tried four types of available beer. I did not have to visit the institution on Svobody, by the way, there were no free places there, perhaps you could find an authentic national flavor and a warm welcome there, but I do not associate this institution with Belarusian warmth and hospitality in any way. They left a lot of money, but zero pleasure. Advertising is the engine of trade, as they say. I admit that we were unlucky with some components, but I can't recommend this place!
